Cooking with Kids: Curry Carrot Soup

There are so many things I want to with and for my kids. One of these many things is to send them on their way with a good set of “life skills”. Today, it is all about being able to cook. Or not just able, but also interested in cooking and interested in food. Many child psychologists, will also tell you that cooking with children will result in them eating better. So cooking, today, it is. And we aim to cook together regularly from now on.

We already do A LOT of baking. Muffins and cookies being very popular in our house, but less cooking – which involves cutting skills and taking care with hot things. Red Ted loved the responsibility of using a knife and a handling a hot kettle. Great for confidence building as much as anything.

I decided to make carrot soup with the kids, as it is EASY – and you don’t have to be too accurate with the chopping,as you blend everything afterwards.

Ingredients – I tend to go by what I have in the house, but very roughly:

  • 5-6 small onions or 2 large ones, olive oil for frying
  • 8-12 carrots
  • 1liter of water (or enough to cover your vegetables) + corresponding soup stock (abou 2 tsp in our case)
  • A tlbsp mild curry powder
  • Garnish (optional) – coriander leaves

Note: The Boy is 4yrs, The Girl is 2.5yrs

Method:

  1. Chop your onions and start frying
  2. Wash and chop your carrots, once the onions are clear starting to turn golden, add the carrots and stock and curry powder
  3. Leave to boil until the carrots are soft
  4. Blend as smoothly as possible

Serve with coriander garnish.

DELICIOUS! The kids ate their carrot soup “all up”. Result. Do you like cooking with kids?
