Easy Spring Cookies

It is very grey and dreary were we are right now – so we decided to bake some Spring Cookies to cheer ourselves up a little. Ok, so these would be great Easter Cookies too, or yummy Mother’s Day Gifts or lovely for a flower party… or.. like us, just bake these easy cookies, because you feel like it! I asked the kids, if they wanted to make “ordinary cookies” or cookie pops and they both shouted “cookie pops, mummy”. I have no idea why placing a cookie on a stick is so much better, but apparently it is! So Flower Cookie Pops it is! Why don’t you also make some lovely 3d Paper Flowers?

Ingredients:

  •  300g (2.5 cups) Flour
  • 200g (3/4 cup) Butter (at room temperature)
  • 100g  (0.5 cups) Sugar

Pre-heat the oven to 180C

  • A glass for cutting
  • Coffee stirrers

Yes that is right – our very classic easy sugar cookie recipe that we have used time and time again. If something works, why change it, right (our favourite cookies based on this are our rainbow cookiestraffic light and frankenstein cookie pops!)?

1) Mix your ingredients to make a smooth dough. If the dough is very soft (i.e. if the butter was very soft), place in fridge for 5-10min to let it firm up a little).

2) Roll out t 0.5cm.

3) Using a glass “cut out” your cookies. Half we left plain “as circles” – the other have, we made little indents all the way round to represent petals.

4) Gently insert your wooden stick and place on tray.

5) Bake for approximately 15min – though do check on them and if they are firm and starting turn golden remove from oven.

6) Let cool a minute or two and then transfer on to a rack.

Once fully cooled:

1) Mix a little mixing with a drop of food colouring and a little water.

2) Decorate the cookie and add silver balls in the middle. For the bee I used a black food gel.

Let set and enjoy!
