Easy Chocolate Chip Cookies (No Eggs)
|Well.. finally, we have had a chance to bake again. And we made our simplest and easiest and most versatile cookies ever: Chocolate Chip Cookies based on our shortbread recipe (recipe has both US and UK metrics and found on my sister site)!
The best thing about this recipe, is that it contains no eggs and is easy for small hands to help you mix (and nibble if need be!).
The next best thing about this dough, is you can make a batch and then freeze some – perfect should you have a last minute play date descend upon you (like we had today). Take out of the freezer, let defrost a little until you are able to cut it into slices, then shove into the oven. Easy peasy.
- Using this recipe (from my sister site) + some chocolate buttons, mix your flour, sugar and butter together.
- Chop up your chocolate buttons/ use choc chips etc add to the mixture.
- Make a long sausage and slice off your cookies.
- Bake in a preheated oven at 180C for 15-20 min – though keep checking. Your cookies will be ready as they turn a golden brown.
Enjoy!

Have to confess since discovering that Sainsbury’s do a ready to bake cookie dough in a tub we haven’t really bothered cooking our own, but i will be giving this a go – i doubt we’ll get round to actually cooking the dough though!

I am always in search for eggless baking recipes, found this one on pinterest! I loved the idea of rolling the dough into a log and then cutting the cookies out of it.
Thanks so much for the idea, cant wait to try it.
